Since I met Mathew, I started this tradition on Easter of making a bunny cake. Last year, I made this one, but sadly, more than half of him didn’t get eaten because 2 people can’t exactly eat a whole cake like that. I mean- i put him on an entire sheet cake pan!

Last year, Mathew’s cousin Jessica had the best idea to make bunny cakes out of cupcakes! That way the people who don’t like coconut or a certain frosting or whatever can make their bunny just the way they like it.

I thought it was brilliant, and actually wondered why I hadn’t thought about it myself! So here goes:

Step 1: Make cupcakes and pass one out to each person

Step 2: Buy different icing flavors, coconut, nuts, candies- whatever your heart desires to decorate your bunny

Step 3: Cut your cupcake in half (it’s easiest if you turn your cupcake on it’s side). Once you have 2 halves, cut on half into 3 pieces as shown in the picture. This will create your ears and the bow tie!

Step 4: Place your pieces as shown on your plate. You can make a girl bunny by cutting the bow tie smaller and placing it by an ear.

Step 5: Frost your bunny how you please. I felt like using strawberry and vanilla, but you can use chocolate or cream cheese, etc.

Step 6: Cover your bunny with coconut on the face and ears. Make sure you get the sides!

Step 7: Decorate your bunny with sprinkles on the ears and candies for the face and bow tie! Then eat!

I know it’s a little late for Easter, but it’s cute for any spring time event. Honestly, we had kids from age 4 all the way to our Granny doing this. It’s just fun for everyone.

As for the rest of our Easter, we spent time at Granny’s house, went to church, and had an Easter brunch! It was great to see the family again. We don’t go up to Wichita Falls very often, so it’s always nice.

On our way back from WF, we stopped by the deer lease and Mathew let me shoot his gun. It was a little scary, but I think it was because I wasn’t prepared for the recoil. I’d like to start learning how to handle guns more just because I think it’d be fun to learn to do target practice, but we’ll see.

When we got home, Mathew and I exchanged Easter gifts baskets. Since I don’t really eat candy, he got me a whoopie pie pop kit. It looks fun and super cute for little get togethers with friends.
