I’ll be the first to admit it…we’ve been bad lately. We’ve eaten out SO much and honestly, it’s gotten the best of us. I think so many times it just seems like it’s easier to just eat out or grab something to-go, but the truth is, it’s more expensive and WAY more unhealthy. Last week, I joined Camp Gladiator (psst let me know if you want to join, I’ll give you a referral!), attended a Young Living Live Your Passion rally, and realized that I needed to continue on self-care in order to be healthy and possibly grow our family later down the road. Eating out wasn’t going to be doing any favors for me- so we’ve stopped, cold turkey. Sure, we’ll go out occasionally, but I definitely won’t be picking up take out for a while. Instead, we’re pinning away at our favorite recipes, and I thought I’d put together a list of 20 Comforting Slow Cooker Recipes for all of our friends to enjoy!

There are some major benefits to slow cooker cooking, like less clean up (because we LOVE these slow cooker bags), and less time in the kitchen. Not only that, but you’re making a delicious meal for your family instead of buying take out! I also love that using a slow cooker means your food has been slowly cooking away all day and that means TONS. OF. FLAVOR.

Mexican rice is a staple in our home. Growing up, it was made for almost every single meal, and my parents had made it for so many years that it was perfect every single time they made it. Now that I’m married and on my own, any time I need to make Mexican rice I call up my mom and dad and ask, “How many cups of rice do I need?” and “How much water do I use?” It’s annoying. I hate that I can never remember the proportions because it’s different since there’s tomato sauce in the recipe, and I can’t stand waiting 25 minutes for it to cook, since I always forget to make it until after I’ve made everything else. I decided it was time for me to figure out a better and faster way to make Mexican rice.

It's so delicious! #ProntoPerfectRice I came across Riceland Boil in a Bag Rice at H-E-B (the best grocery store in Texas EVER…seriously), and thought I’d try my hand at a faster way to make my 10 Minute Mexican Rice while still preserving the flavors that I’d come to know and love my whole life. I also grabbed a few typical Mexican rice staples like tomato sauce, a sweet onion, cilantro, and lime wedges. Thanks to my dad, I didn’t need to grab cumin and granulated garlic. Seems like every time he comes to visit (usually for Addie’s surgeries), he grabs the big bottles of spices for my pantry. I think I have 4 of each in there right now!

10 Minute Mexican Rice

Looking for a faster way to make mexican rice? This Mexican Rice is SUPER easy and delicious! The best part? It only takes 10 minutes to make!
Ingredients
  • 2 bags Riceland Boil in a Bag Rice
  • ¾ can Tomato Sauce
  • ½ tsp Olive Oil
  • ½ Sweet Onion, chopped
  • 1 tsp Cumin
  • 1 tsp Granulated Garlic
  • Cilantro
  • Lime wedges
Instructions
  1. Follow package instructions for Riceland Boil in a Bag Rice and cook the rice for 10 minutes.
  2. While rice is cooking, in a separate skillet, heat olive oil on medium heat.
  3. Add onion and cook for about 7 minutes until translucent.
  4. Pour can of tomato sauce into skillet and add cumin, garlic, and salt to taste. Allow to cook for 3 minutes to take out the raw tomato taste.
  5. Drain Riceland Boil in a Bag Rice and pour into the skillet. Mix gently with a spatula in order to combine all ingredients together.
  6. Garnish with a little leftover onion, cilantro, and a squeeze of a lime wedge.

The 4th of July is coming up and we are WAY too excited! We’re taking Addie on her very first vacation out of town and are so excited about it! She’s only been out of town once, and it was for a doctor consultation, so we’re really thrilled that she is healthy enough to go on a trip to my hometown to visit my family. I actually haven’t been to my hometown since before Addie was born when I had The Best Pink Baby Shower, so it’s going to be SO good to visit. I wanted to come up with a snack to take for the road on our trip that was fun and screamed “America!”, and I’m so excited about it! The 4th of July Popcorn with Skittles® America Mix from Dollar General was SO fun to make, and super easy. In fact, I actually made it while Addie took a nap. Obviously I chose the Special Edition Skittles® America Mix because of the colors, but not only that, but the flavors are so good! The Special Edition Skittles® America Mix features strawberry, blackberry, raspberry, wildberry, and yumberry (the first white, fruity Skittles® candy.)  Each flavor is unique and fun, and made the perfect red, white, and blue 4th of July Popcorn.

4th of July Popcorn with Skittles America Mix

Ingredients
  • 1 bag Special Edition Skittles America Mix
  • ¾ cup Light Corn Syrup
  • 12 oz Butter
  • 3 bags Buttered Popcorn
Instructions
  1. Separate your bag of Special Edition Skittles America Mix by colors- Red, White, and Blue. You should have about 1-2 cups of each color.
  2. Pop your 3 bags of popcorn. Keep in bags.
  3. Melt 4 oz of butter and ¼ cup light corn syrup with 1 cup of red, white, or blue Special Edition Skittles America Mix flavor and stir constantly until Skittles are melted in a heat proof container in 30 second increments in the microwave. Stir in between until completely melted.
  4. Pour over 1 bag of popcorn and shake in the bag until well coated.
  5. Pour the Skittles popcorn onto waxed paper until it has cooled.
  6. Repeat with next two colors.

 

I’m pretty sure when I get back from my trip this week that there won’t be any 4th of July Popcorn left because of Mathew, but that’s ok because I have plenty more Special Edition Skittles® America Mix! My husband has a huge sweet tooth and once he finds something he loves, he’s hooked until there’s no more. I might end up making this for our 4th of July barbecue that my dad will be having while we’re visiting, and I suggest you make it for yours too. Everyone will be asking you for the recipe, and you definitely won’t go home with any leftovers!
