You know the old saying, “The way to a man’s heart is through his stomach”? That is the case when it comes to my husband, Mathew. I swear that man married me because of my cooking. I reeled him in in our dating days with my creamy chicken alfredo and my “oatstanding” oatmeal crasin cookies. Over the years, I’ve cooked a lot of delicious desserts, but there’s one thing he loves that is his love language- cookie cakes. I love baking cakes for my family’s birthdays and Mathew would always rather have a cookie cake instead! I never have been one to really enjoy cookie cakes, but this Valentine’s I was determined to make a cookie cake that not only he could enjoy, but that I could take a bite or two of and not want to spit out. So…I went through some of my favorite cookie recipes and am bringing you the Best Valentine’s Cookie Cake Ever!

I’ll tell you, there’s a secret to making the Best Valentine’s Cookie Cake Ever- it’s to not over bake it. I like to err on the side of caution and set my timer for a couple minutes less than I usually would with typical cookies to make sure that it’s not overdone. In combination with my cookie recipe, it makes for seriously THE Best Valentine’s Cookie Cake Ever.

Ingredients
  • 1 c Butter
  • ¾ c Sugar
  • 1 c Brown Sugar
  • 1 Tbsp Vanilla
  • 2 Eggs
  • 3 c H-E-B Select Ingredients Baker's Scoop All Purpose Flour
  • 1 tsp Baking Soda
  • ½ tsp Baking Powder
  • ¼ tsp Salt
  • 2 c Semisweet Chocolate Chips
  • Pillsbury Cream Cheese Frosting
  • Sprinkles
Instructions
  1. Preheat oven to 350
  2. In a saucepan over medium heat, melt butter. Cook until butter is light brown in color and smells nutty. Then remove from heat.
  3. Combine sugar, brown sugar, and vanilla in a mixing bowl. Stir in browned butter.
  4. Carefully mix in eggs until just combined.
  5. In another bowl, sift flour, baking soda, baking powder, and salt together. Fold into other bowl until well combined but not over mixed.
  6. Fold in chocolate chips.
  7. Press dough into greased Handi-Foil Cook-N-Carry Heart Pan into a nice, even layer.
  8. Bake 10-15 minutes. Start your timer with 10 minutes and add time as needed until you achieve a light brown cookie.
  9. Cool completely and decorate with frosting and sprinkles.

When I made this for Mathew, you should’ve seen how big his eyes got! He loves cookie cake so much! I used cream cheese frosting to give a little tang and offset some of the sweetness from the cookie. I don’t like desserts to be sickly sweet, and the cream cheese was a perfect pairing. I love making goodies for him and cookie cakes always seem to make him smile. Even better? He proclaimed, “This is the Best Valentine’s Cookie Cake Ever!” and it completely made my day.

We found this fun red wall here in Waco, and it was perfect for our plan! It was absolutely freezing that day, but we had a blast! I met my friend, Amy, from Sweet Elise online and I was smitten with her cookies. I asked her to make us some for our conversation hearts valentine’s pregnancy announcement photo shoot and she nailed them! How cute are these conversation heart cookies? Ever since then, we’ve been getting cookies from her for our big gender reveal party, the cutest lemonade first birthday party ever, and her adorable zoo themed 2nd birthday party (which I’ve yet to blog about because #slacker.) Her cookies are adorable and way delicious, and I won’t use anyone else for cookies. I don’t even care that I have to drive to Austin to get them either!

Our little Addie, the blueberry! She was so teeny tiny back then. Our lives have been a complete whirlwind since her anatomy scan at 18 weeks (read about my pregnancy complications part 1 and part 2) and her 10 month hospitalization after she was born.

We had no idea what was coming our way, how much strength our journey would require, and how much she would change our lives. We are so blessed to have such a beautiful girl who brings joy to thousands. It is truly a privilege to be her parents.

1. I made the CUTEST valentines for my students last night. With all the candy that they’ll be getting today, I didn’t want to add to their huge pile of cavities. I decided to go and buy a huge box of goldfish, some cute valentine cellophane bags, and made these fun tags for my kiddos. I think they came out great! I’ll take a picture of them on their desks today to show y’all on Instagram, but I thought it’d be nice to share my little craft making with you all and give you a freebie printable for your kids! 3. I’m dreaming of warm climates and wishing I was back in Mexico on my honeymoon. Thinking of Mexico is ALWAYS a happy because we seriously had the best week of our lives there. Oh, how I long to go back…

4. I’ve got a special Valentine’s dinner on the menu for tonight. We decided it’d be more cost efficient to eat in this year, especially because we always choose to go somewhere uber fancy, and I took it upon myself to decide the menu since I’ll be cooking. It’ll still be fancy and over the top, but definitely WAY less expensive than if we’d chosen to go out to eat. For our appetizer I’ll be making cheese fondue with cheddar and swiss cheese. To dip I’ll be buying pumpernickel bread and granny smith apples. For the main course I’ll be making steaks, mashed potatoes, and green beans. I’m drooling already for the steaks! As for dessert, I’ll be making a mock recipe of turtle pecan fondue from one of my favorite restaurants, The Melting Pot. It’ll be chocolate with caramel and pecans in it. I also decided it’d be fun to buy strawberries, marshmallows, and rice krispy treats to dip in it. I’m really hoping it’ll be as much of a success in person as it is in my head.

5. My parents are coming to visit us this weekend! I’m really excited because we haven’t seen them since New Years and they hardly ever come to town. Last time they came up here it was in the fall, and before then it’d been May when I graduated from college. Although the house isn’t quite in order yet like I wanted it to be (see crappy #1), I know it’ll all come together before they arrive.

 

CRAPPIES

1. So much for blogging mojo! I got sick this week and have been down for the count. I even stayed home yesterday to rest and felt even worse. I’m so ready to have the energy to blog for next week! I had to miss work yesterday (and I HATE missing work) because I felt so rotten. I think I’m on the mend, but we’ll see!
