This week I’m super excited for an annual party of mine- Friendsgiving. It’s something I started last year for my Young Living team and I plan on doing it every year. Cooking for people has been a love of mine since I was in high school. My best friend, Sarah, introduced me to the Food Network in the early 2000’s and I’ve been hooked ever since. There’s something about cooking that has always fascinated me. As a little girl, I would go to my Memaw and Pepaw’s house after school and I’d help make homemade flour tortillas. I had such joy rolling out the tortillas in different shapes! My Memaw and I would make the dough from scratch and would eat homemade macaroni and cheese while we waited for the dough to rise. I had the best memories at their house just cooking away. I loved watching my Memaw add freshly ground comino (that’s Spanish for cumin!) and garlic to her recipes, and how everything she made was amazingly delicious.

During the holidays, I remember cooking with my mom, my aunt, and my Grandma for Thanksgiving. Ruining Thanksgiving cornbread was a talent I once had (ha!) but I redeemed myself by making the green bean casserole. For Christmas, my Aunt Gloria would invite me to her home to make homemade Christmas cookies with my cousin Monica. It was always such a fun time and I looked forward to it each year.

There was just something about cooking that always fascinated and inspired me. I’m also really competitive so cooking was a way to compete with myself. How can I get the most reaction out of people that I feed? How can I get this meal to top the last one? Honestly- this Low Calorie Butternut Squash and Pancetta Pasta Bake made with La Moderna Golden Harvest Penne Rigate takes the cake! Not only that, but since I’m working out with Camp Gladiator right now, I really am watching what I eat and I track my macros. I challenged myself to make this as lightened up as possible without sacrificing any flavor. I think you’ll agree with me that this dish is a perfect one to make during the holidays, for Friendsgiving, Thanksgiving, or even a Christmas Eve meal.

Ingredients
  • Coconut oil cooking spray
  • 20 oz uncooked butternut squash, fresh, peeled and cubed
  • 1 box La Moderna Golden Harvest Penne Rigate
  • 2 oz Pancetta, chopped
  • 1¼ cups 2% milk
  • 2 Tbsp all purpose flour
  • 2 tsp minced garlic
  • 1 tsp salt
  • 1 tsp black pepper, freshly ground
  • 1 Tbsp fresh thyme, fresh
  • 2 Tbsp Sage, ground
  • ½ cup part-skim ricotta cheese
  • ¼ cup Shaved Parmesan cheese
Instructions
  1. Preheat oven to 375ºF. Thinly coat a baking sheet with coconut oil cooking spray. Thinly coat a 9x11 glass baking dish with coconut oil cooking spray.
  2. Place butternut squash onto the baking sheet. Salt squash with 1 tsp salt. Roast about 20 to 30 minutes. Mash the butternut squash on the baking sheet and put to the side.
  3. Meanwhile, bring a large pot of salted water to a boil. After the butternut squash has been roasting for about 10 minutes, cook the La Moderna Golden Harvest Penne Rigate for 7 minutes; drain and return to pot. Penne will be very al dente.
  4. In a medium saucepan, whisk together milk, flour, garlic, salt and pepper. Bring this mixture to a boil over medium-high heat, whisking constantly. Reduce heat to low and simmer, whisking until thickened, about 2 minutes. Remove the sauce from heat, stir in mashed butternut squash, thyme, and 1 tbsp sage. Add the sauce to the penne and mix with a silicone spatula.
  5. In a small pan, cook chopped pancetta until brown and crispy. Drain grease, set aside.
  6. Transfer the penne mixture to your oiled baking dish. Dot the top with small spoonfuls of ricotta and then sprinkle with parmesan and pancetta. Sprinkle remaining sage and bake until top is lightly browned in a few spots, about 15 to 20 minutes.

It’s hearty and makes you feel like you’re being “bad” and eating comfort food, but it’s actually low in calories! The sage and thyme in the Low Calorie Butternut Squash and Pancetta Pasta Bake are really what make this meal taste like the holidays, and honestly, the taste is so delicious, you won’t think it’s low calorie at all. Because I count my macros, I was able to eat a portion and have seconds- and I didn’t feel one bit guilty! I grabbed the La Moderna Golden Harvest Penne Rigate at Walmart. I’ve been exclusively pumping for Addison for almost 11 months now. Some days are easy, and some days I just need to get away from my pump. Breastfeeding and exclusively pumping are some of the hardest things to have to do for your baby, mainly because of the demand. No demand…no supply. It can get rough. It’s also pretty monotonous. Quick 5 Minute Hairstyles For the Mom On the Go

I’m gonna be really honest with you guys- I HATE doing my hair. HATE it. It’s naturally curly, and although many would “kill” for my hair type, I don’t like it one bit. I can’t just wake up in the morning most days and get it to look right without it taking up a good chunk of time. I’m on a schedule in the mornings – wake up, pump, shower (or not on some days), fix my hair quickly, pack my pump parts, lunch, and clothes for Addie, and run out the door. I always try to get to the NICU as early as possible, and that can be hard with my challenging hair. Lately I’ve been doing these 3 quick 5 minute hairstyles for the mom on the go so I look put together enough to talk to doctors all day, but I’m not in front of my mirror for an hour in the morning.

The Goody QuikStyle Brush is perfect for the mom on the go!I went to Walgreens after being at the hospital the other week to grab my essentials (deodorant, toothpaste, etc) and saw that they have a Buy 1 Get 1 Free Goody TangleFix and Quikstyle hairbrush deal now until November 1st, 2014 (while supplies last) if you have a Walgreens Balance Rewards card.  I snagged my brushes and wanted to try them out. The Quikstyle half round hairbrush has super absorbent microfiber bristles that work like a towel removing 30% of water, while the shape makes it the perfect blow-out brush. I initially use it out of the shower to detangle my hair and then let my hair air dry. Then, I use it to help style my quick 5 minute hairstyles.

The Goody Tanglefix that comes with the Quikstyle is my favorite brush for coming out of the shower because my curly hair gets so tangled. It has 3 different bristle lengths to get out tangles without ripping my hair and has easy grip sides so the brush isn’t coming out of my wet hands. Then I do a once over with my Quikstyle and I’m good to go!

This fun bun takes less than 5 minutes for the mom on the go and all you need is this Goody Quikstyle brush, 2 hair ties, and a few bobby pins! This blogger makes it look easy!

The Fun Bun is my most commonly done hairstyle. If I wake up with frizzy hair all I have to do is use my Goody Quikstyle half round hairbrush to give a little volume on top, then I secure my hair into a ponytail. Then, I wrap my ponytail into a donut shape, and put another hair tie on top to hold all my loose hair. I don’t need bobby pins at all, and it stays ALL day.

The Simple Chignon is another favorite quick 5 minute hairstyle of mine because it reminds me of Izzie from Grey’s Anatomy. I twist the side of my hair into a low ponytail, and then pull my ponytail through the middle to create more of a twist. I then grab the ends of my hair in the ponytail and roll my hair up and pin with bobby pins in place. Then, I use my Goody Quikstyle to smooth out any frizzies to finish the job.

It's a perfect quick 5 minute hairstyle for the mom on the goLastly, the Twisted Pony is my other go-to quick 5 minute hairstyle. I twist the top and side of my hair, use my Goody Quikstyle brush to smooth my hair into a ponytail, and wrap a 1 inch section of hair around my hair tie and tuck the ends of that section back into my hair tie so it’s all secure.

The Goody Quikstyle is such a time-saver for me because it helps my hair dry as I brush, and the microfibers don’t make my hair frizz. I can spend 5 minutes (or less) on my hair and get to Addie in the NICU faster each morning. Our lives are crazy right now, and anything that makes my day go more smoothly I’m all for!
